Take a 21 pound turkey and rub olive oil, salt, pepper, and garlic into the skin. In the cavity place the contents of a can of Pepsi and a bottle of Mad Dog grape wine (Yeah, that really bad cheap wine). Add a stick of butter and place the entire bird in an oven bag. Secure the bag and bake in a 350 oven for approximately three hours. Yesterday was about the fifth time we have cooked a turkey this way and all of them have been incredibly moist and good. Add some mushroom soup and thickener to the drippings and you have a great gravy to accompany the meal.
Kathy, along side her regular stuffing, made no carb stuffing out of Atkins bread. It was kind of like eating carob chip cookies instead of hot out of the oven chocolate chip cookies. I ate some mashed potatoes, two pieces of bread, and a piece of my mom's amazing pumkin pie. They are all very high in carbs, but before we started this diet we agreed that Thanksgiving and Christmas were diet free days.
To have my sons, Justin and Derek, my mom and Herm, Kathy's folks, my friend Pete's wife and my own sweet wife all in our apartment for Thanksgiving dinner made me realize again the goodness of God in my life. I am truly grateful for God's graciousness.
